What is Skimmed Milk Powder?

Skimmed Milk Powder is obtained by removing water from pasteurized skim milk. It contains 5% or less moisture and 1.5% or less milk fat. Skimmed milk powder has 35% minimum milk protein.

When it comes to the application of skimmed milk powder, it is seen as an economical source of non-fat dairy solids. It is a source of functional dairy solids.

In bakery, skimmed milk powder increases loaf volume, improves water binding capacity, and enhances flavor of breads. At the same time, it also optimizes sensory properties of other dairy food applications such as beverages, confectionery, and ice creams.


What is the difference of skimmed milk powder to other milk products?

According to Codex Standard 207-1999, the food standard for milk powders, a milk powder can be labeled as skimmed milk if it contains a maximum of 1.5% milk fat. With this, skimmed milk powder can be considered as a healthier alternative to other milk products due to its lower fat content and calories. - It can also have a higher calcium content than whole milk powder which aids in bone development.

Aside from being a healthier alternative to other milk products, skimmed milk powder also helps improve different properties of bread dough such as its stability, development, water absorption capacity, and capacity to retain gas.
